The lamb rib or better known contains rib bones and should be slow cooked. They are delicate and are fatty. They are very nice but require just the right temperature and the right recipe.

The Shank is cut from the shin on either the front or hind leg. It is one of the most flavourful pieces of the animal with a very thin membrane and a thin layer of fat. It is said to be leaner than a sirloin steak.
